Deeply lobed silvery-green leaves grow in a large rosette. The flower buds are fleshy with diameter 2 to 5 inches on top of tall stem. Flower head has high nutrition value and benefit for heart. Artichoke head will bloom to purple thistle-like flowers if not harvested early summer. Prefer to grow in warm summer. Good choice for commercial gardeners. About 4 feet tall.
